{"id":47,"date":"2013-03-17T18:12:18","date_gmt":"2013-03-18T01:12:18","guid":{"rendered":"http:\/\/www.nadynerichmond.com\/dinnerfortwo\/?p=47"},"modified":"2013-03-17T18:12:18","modified_gmt":"2013-03-18T01:12:18","slug":"beef-tacos","status":"publish","type":"post","link":"https:\/\/www.nadynerichmond.com\/dinnerfortwo\/2013\/03\/17\/beef-tacos\/","title":{"rendered":"beef tacos"},"content":{"rendered":"<p>I love tacos. \u00a0How can you not? \u00a0They&#8217;re small, eaten by hand, and infinitely customizable. \u00a0When I was growing up, I thought tacos weren&#8217;t very exciting. \u00a0My parents would use some kind of pre-made taco seasoning in a packet, and the resulting tacos were just what you&#8217;d expect: bland and bland, with a side of bland. \u00a0On moving to California, I learned that tacos didn&#8217;t have to be like that. \u00a0I set out to make great tacos at home, and came to this. \u00a0It takes more time than I expected after all those years of quick-but-tasteless tacos, but it&#8217;s not a lot of effort, and the end product is definitely worth the wait.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 pound ground beef<\/li>\n<li>4-5 white mushrooms, diced (optional)<\/li>\n<li>5 garlic cloves, chopped<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>2 tablespoons chili powder<\/li>\n<li>2 teaspoons cumin<\/li>\n<li>3 tablespoons paprika<\/li>\n<li>1\/2 onion, chopped finely (reserve other half for another use, or chop it finely for serving)<\/li>\n<li>1\/2 bell pepper, chopped finely\u00a0(reserve other half for another use, or chop it finely for serving)<\/li>\n<li>shredded cheese (for serving)<\/li>\n<li>chopped tomato (for serving)<\/li>\n<li>sour cream (for serving)<\/li>\n<li>guacamole (for serving)<\/li>\n<li>tortillas or taco shells (for serving)<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<p>Place ground beef, mushrooms, and spices in medium saucepan. \u00a0Cover with water, and bring to a boil. Reduce heat to medium-low. Simmer meat for an hour, breaking up meat into small pieces with a potato masher &#8212; the final product should not be lumpy. Add water during the hour if needed. Add the onion and bell pepper to the saucepan, and simmer for another half hour.<\/p>\n<p>Optionally, to lower the fat content, pour into strainer, reserving liquid. Let liquid cool and skim fat off. Stir 1 teaspoon cornstarch into 1\/4 cup cold water. In a small saucepan, bring liquid to a boil, then pour in cornstarch.
